Beschreibung:
Dieses Malz wird nicht aus Gerste, sondern aus Weizen hergestellt. Es wird für Weißbier, Kölsch, Altbier, sowie Bier mit geringer Stammwürze, überwiegend obergärig, verwendet. Weizenmalz entwickelt das typische obergärige Aroma, hebt den Weizengeschmack hervor und erhöht den gelösten Gasdruck im Bier merklich. Verbessert die Schaumbeständigkeit. Wird häufig als Zusatz zu anderen Basismalzen verwendet, um die Trübung des Biers bei Bedarf zu erhöhen, z. B. NEIPA. Sortenfraktion bis zu 70 %. Gose-Bier kann mit bis zu 95 % eingebraut werden. Nicht zu verwechseln mit ungemälztem Weizen (das ist eine andere Kategorie).
