Adaptation is, in general terms, a change in part of the original (recipe, composition, technology) due to a lack of components. Yes, they adapt not from a good life. In terms of brewing, adaptation is associated with a lack of authentic raw materials (malt, yeast, hops), generally accepted beer styles (let's add "American" to existing beer styles and get our own unique style?), production and aging technologies ("Wood Aged Beer" on oak chips), etc.
