Dry Brett yeast for secondary fermentation. It offers all the flavor benefits of "wild" Brett yeast, but with more control and reliability, to reduce the risk of over-carbonation after bottling. Produce phenolic components that create funky notes of barnyard, leather, horse & fruity notes. The aroma will evolve over time as the beer is aged.
